  • 1 large Honeycrisp apple, thinly sliced These provide the best crunch and sweet-tart balance.
  • 1/2 cup feta cheese, crumbled Salty and creamy; goat cheese is a mild substitute.
  • 4 cups mixed greens Arugula adds peppery zip, spinach keeps it tender.
  • 1/3 to 1/2 cup nuts (walnuts or pecans) Toast for more flavor; almonds add a clean, crisp bite.
Dressing
  • 3 tablespoons olive oil Use extra virgin for the best flavor.
  • 1 tablespoon apple cider vinegar Bright and slightly sweet.

Method
 

Preparation
  1. Wash and thoroughly dry a generous handful of mixed greens.
  2. Core and thinly slice one large Honeycrisp apple or two small ones.
  3. Crumble about 1/2 cup of feta over the greens and apples.
  4. Add 1/3 to 1/2 cup of nuts, roughly chopped if larger.
  5. Whisk together the dressing ingredients in a small bowl.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Serve immediately to preserve crunch.
