For the meatballs
  • 1 pound ground turkey Lean ground turkey for a lighter option.
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 1/4 cup finely chopped onion Small dice for tenderness.
  • 2 cloves garlic, minced
  • 1/4 cup honey Extra for glazing if desired.
  • 1/4 cup soy sauce Or tamari for gluten-free.
  • 1 tablespoon olive oil
  • 1 teaspoon salt Adjust based on preference.
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl combine the ground turkey, breadcrumbs, chopped onion, minced garlic, honey, soy sauce, olive oil, salt, pepper, ground ginger, and egg.
  3. Gently mix everything until just combined, avoiding overworking the meat to keep the meatballs tender.
  4. Form the mixture into even meatballs about 1 to 1 1/4 inches in diameter and arrange them on the prepared baking sheet with a bit of space between each.
Cooking
  1. Bake for 20 to 25 minutes, or until the meatballs reach an internal temperature of 165°F and are lightly browned on the outsides.
  2. If desired, warm a little extra honey and soy together with minced garlic and a pinch of ginger in a small pan; simmer to slightly thicken, then toss or drizzle over the cooked meatballs before serving.
