  • 14 ounces smoked sausage, sliced into ½-inch rounds Use kielbasa or similar sausage.
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes Cut into similar sizes for even cooking.
  • 1 large head broccoli, cut into bite-sized florets Can substitute with Brussels sprouts or green beans.
  • 1 tablespoon olive oil
Honey Garlic Sauce
  • ¼ cup honey Can reduce the amount for less sweetness.
  • ¼ cup low-sodium soy sauce Use tamari for gluten-free version.
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water This thickens the sauce but can be skipped.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, salt, and pepper. Spread them in an even layer on the baking sheet.
Roasting
  1. Roast sweet potatoes for 15 minutes.
  2. While roasting, make the sauce by simmering honey, soy sauce, minced garlic, and apple cider vinegar in a saucepan. Whisk in the cornstarch slurry until thickened, then remove from heat.
  3. Add sausage and broccoli to the baking sheet, drizzle with half the sauce, and toss gently.
  4. Return to oven and roast for an additional 15-20 minutes until sweet potatoes are tender.
  5. Drizzle remaining sauce over the dish, toss gently, and serve hot.

Notes
