Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup Honey BBQ sauce store-bought or homemade
For the Potatoes
  • 2 lbs potatoes (Russet or Yukon Gold) Yukon Gold yields a creamier mash; Russets give a fluffier texture.
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 tablespoons minced garlic Use less garlic for kids sensitive to bold flavors.
  • 3 tablespoons butter Can swap half for Greek yogurt or sour cream for fewer calories.
  • to taste Salt and pepper
  • for garnish Fresh parsley

Method
 

Preparation
  1. Preheat your grill to medium (350–400°F) or preheat the oven to 375°F (190°C).
  2. Pat the chicken breasts dry, season both sides with salt and pepper, then brush each piece with a generous coat of Honey BBQ sauce.
Cooking Chicken
  1. Grill or bake the chicken breasts for about 6 to 8 minutes per side, until an instant-read thermometer reads 165°F (74°C) at the thickest part.
  2. Remove from heat and let rest for 4 to 5 minutes before slicing to keep juices locked in.
Preparing Potatoes
  1. While the chicken cooks, wash and dice the potatoes into roughly 1-inch pieces.
  2. Put the potatoes in a pot, cover with cold water, bring to a boil, then simmer until tender, about 15 to 20 minutes.
  3. Drain and return potatoes to the pot over low heat for 30 seconds to let moisture evaporate.
  4. Add butter, minced garlic, shredded cheese, salt, and pepper. Mash until smooth and creamy, taste and adjust seasoning.
Serving
  1. Slice the rested Honey BBQ chicken and serve beside generous scoops of cheesy garlic potatoes.
  2. Garnish with chopped fresh parsley.

Notes
