  • 2 cups cooked chicken, shredded Leftover chicken works great here.
  • 1 can black beans, drained and rinsed Canned beans save time.
  • 1 cup corn Fresh, frozen, or canned corn works well.
  • 2 cups cooked brown rice Ensure rice is cooked prior to mixing.
  • 1 cup diced tomatoes Canned or fresh tomatoes can be used.
  • 1 cup bell peppers, diced Any color bell peppers are fine.
  • 1 cup shredded cheese Cheddar or a Mexican blend recommended.
  • 1 tablespoon taco seasoning Homemade seasoning can enhance flavor.
  • to taste salt and pepper
  • for garnish fresh cilantro Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked chicken, black beans, corn, brown rice, diced tomatoes, bell peppers, taco seasoning, salt, and pepper until well combined.
  3. Transfer the mixture to a greased 9x13 inch baking dish.
  4. Sprinkle the shredded cheese evenly over the top.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Once done, remove from the oven and let it cool slightly before serving. Optionally, garnish with fresh cilantro.

Notes
