- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and diced bell pepper; cook until softened and fragrant, about 4 to 5 minutes.
- Push vegetables to the side; add ground turkey, breaking it up with a spoon. Cook until no longer pink and lightly browned, about 6 to 8 minutes.
- Sprinkle taco seasoning over turkey and stir to coat evenly.
- Pour in diced tomatoes, black beans, and corn; stir to combine.
- Reduce heat to medium-low and simmer for 5 to 10 minutes, adding a splash of water if needed to loosen the sauce.
- Taste and season with salt and pepper.
- Serve in warmed tortillas, over rice, or in a bowl with your favorite toppings.
