Preparation
- Heat a drizzle of olive oil in a large skillet over medium-high heat.
- Add the sliced onions and bell peppers. Sauté for 3-5 minutes until they become tender. If adding mushrooms, toss them in now and continue cooking for another 3 minutes.
- Push the veggies to one side of the skillet and add the ground beef, breaking it apart with a spatula. Cook for about 5-7 minutes until the beef is no longer pink.
- Stir in the garlic powder, Worcestershire sauce, salt, and pepper. Mix everything well and cook for an additional 2 minutes.
- Lower the heat and layer the provolone cheese over the beef mixture. Cover the skillet to let the cheese melt for 2-3 minutes.
- Slice the hoagie rolls lengthwise. Spoon the beef and vegetable mixture into each roll, serve hot, and consider toasting the rolls for an extra crispy texture.

Notes
For extra flavor, consider marinating the sliced veggies with a bit of balsamic vinegar before cooking. Experiment with different cheeses or sautéed jalapeños for added spice.
