  • 3 cloves Garlic, minced
For the sauce

  • 1/2 cup Parmesan cheese or nutritional yeast Use nutritional yeast for dairy-free option
  • 2 tablespoons Lemon juice Adjust to taste
For the vegetables
  • 4 cups Broccoli florets Can substitute with other veggies like asparagus or zucchini
For serving
  • 2 cups Cooked rice or quinoa Base for the bowl

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine olive oil, minced garlic, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for about 10 minutes.
Cooking
  1. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  2. In a separate pan, sauté the broccoli in olive oil over medium heat for about 5-6 minutes until tender.
  3. In a saucepan, heat the heavy cream over medium heat, then stir in Parmesan cheese and lemon juice. Cook until the cheese is melted and the sauce is creamy.
Assembly
  1. Assemble everything over cooked rice or quinoa.
