Preparation
- Add the Greek yogurt, peanut butter, honey or maple syrup, vanilla, and a pinch of salt to a large mixing bowl.
- Stir until the mixture is smooth and evenly blended. Taste and adjust sweetness if needed.
- Line a baking sheet with parchment paper to stop the bites from sticking.
- Use a small scoop or spoon to drop spoonfuls of the mixture onto the parchment. Aim for evenly sized bites so they freeze uniformly.
- Top each bite with chopped nuts, chocolate chips, or fruit if you like. Press toppings in lightly so they stay put.
- Transfer the baking sheet to the freezer and freeze for at least 2 hours, or until the bites are firm.
- Once frozen solid, transfer the bites to an airtight container or freezer bag and return them to the freezer.
- Enjoy straight from the freezer when you want a quick snack.
