Ingredients
  

Base Ingredients
  • 2 cups Greek yogurt Use full-fat for creamier texture, or 0% for lower calories.
  • 1/2 cup natural peanut butter Stirred, or use almond butter as a substitute.
  • 1/4 cup honey or maple syrup Adjust to taste; agave works too.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
Optional Toppings
  • 1 cup chopped nuts Such as walnuts or almonds.
  • 1 cup chocolate chips Mini chocolate chips work well.
  • 1 cup fresh fruit (fresh raspberries or sliced banana) Work well if you’ll eat them soon.

Method
 

Preparation
  1. Add the Greek yogurt, peanut butter, honey or maple syrup, vanilla, and a pinch of salt to a large mixing bowl.
  2. Stir until the mixture is smooth and evenly blended. Taste and adjust sweetness if needed.
  3. Line a baking sheet with parchment paper to stop the bites from sticking.
  4. Use a small scoop or spoon to drop spoonfuls of the mixture onto the parchment. Aim for evenly sized bites so they freeze uniformly.
  5. Top each bite with chopped nuts, chocolate chips, or fruit if you like. Press toppings in lightly so they stay put.
  6. Transfer the baking sheet to the freezer and freeze for at least 2 hours, or until the bites are firm.
  7. Once frozen solid, transfer the bites to an airtight container or freezer bag and return them to the freezer.
  8. Enjoy straight from the freezer when you want a quick snack.

Notes
