Ingredients
  

For the Chicken Marinade
  • 2 pieces boneless, skinless chicken breasts Can substitute with grilled shrimp or tofu.
  • 3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 piece lemon (juiced)
  • 1 teaspoon dried oregano
  • to taste salt and pepper
For the Bowls
  • 1 piece cucumber (diced)
  • 1 piece tomato (chopped)
  • 1 piece red onion (finely chopped)
  • 1 cup feta cheese (crumbled)
  • 1 can chickpeas (drained and rinsed)
  • 1 cup tzatziki sauce store-bought or homemade
  • for garnish fresh parsley

Method
 

Marinate the Chicken
  1. In a bowl, mix the olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  2. Coat the chicken well in this marinade and allow it to soak for at least 30 minutes.
Cook the Chicken
  1. Preheat your grill or oven and cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
Prepare the Tzatziki
  1. While the chicken is cooking, prepare the tzatziki sauce by mixing diced cucumber, yogurt, minced garlic, lemon juice, salt, and fresh dill in a separate bowl.
Chop the Vegetables
  1. Chop the tomatoes, red onion, and parsley to have everything ready for assembly.
Assemble the Bowls
  1. Once the chicken is done, let it rest for a few minutes before slicing it thinly.
  2. Start with a base of chickpeas in each bowl, add the sliced chicken, top with fresh vegetables, and drizzle with tzatziki sauce.
  3. Finish off by sprinkling crumbled feta cheese on top.

  1. Serve immediately or store in meal prep containers for later.

Notes
