Ingredients
  

Dry Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Should be at room temperature.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 batch Icing (optional) For decorating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the dry ingredients to the wet mix, stirring gently until just combined.
Baking
  1. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  2. Flatten each cookie slightly and bake for about 8-10 minutes, until the edges are set but centers still look soft.
  3. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Decoration
  1. If desired, decorate with icing.

Notes
