Preparation
- Preheat your oven to 400°F (200°C) and place the rack in the center position.
- Pat the shrimp dry with paper towels to help the coating stick and to promote browning.
- In a large bowl, stir together the minced garlic, olive oil, grated Parmesan, and chopped herbs until you have a loose paste.
- Add the shrimp to the bowl. Toss gently until every piece is evenly coated. Season with salt and pepper to taste.
- Arrange the shrimp in a single layer on a baking sheet lined with parchment or lightly oiled to roast them instead of steaming.
Cooking
- Bake for about 10 minutes, checking at 8 minutes. Remove from the oven when the shrimp are just opaque and pink.
- Serve warm with extra chopped herbs and a squeeze of lemon if desired.
