Ingredients
  

For the Shrimp
  • 1 pound raw shrimp, peeled and deveined (tails on or off as preferred) Use frozen shrimp that’s been fully thawed if fresh isn’t available.
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup grated Parmesan cheese Use finely grated for even coating; Pecorino Romano works as a sharper substitute.
  • 1 tablespoon chopped fresh parsley or basil Parsley is classic; basil adds a sweeter note.
  • 1/2 teaspoon fine salt Adjust to taste.
  • 1/4 teaspoon freshly ground black pepper Adjust to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and place the rack in the center position.
  2. Pat the shrimp dry with paper towels to help the coating stick and to promote browning.
  3. In a large bowl, stir together the minced garlic, olive oil, grated Parmesan, and chopped herbs until you have a loose paste.
  4. Add the shrimp to the bowl. Toss gently until every piece is evenly coated. Season with salt and pepper to taste.
  5. Arrange the shrimp in a single layer on a baking sheet lined with parchment or lightly oiled to roast them instead of steaming.
Cooking
  1. Bake for about 10 minutes, checking at 8 minutes. Remove from the oven when the shrimp are just opaque and pink.
  2. Serve warm with extra chopped herbs and a squeeze of lemon if desired.
