  • 1 pound baby potatoes Any small variety can be used.
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt Adjust to preference.
  • to taste Pepper Adjust to preference.
  • 2 tablespoons olive oil
  • 1 cup chicken broth Taste before adding extra salt.

Preparation
  1. In a large mixing bowl, combine minced garlic, Parmesan cheese, Italian seasoning, salt, pepper, and olive oil. Mix thoroughly.
  2. Add the chicken breasts to the bowl and coat them evenly with the mixture.
  3. Place the baby potatoes at the bottom of your crockpot, creating a cozy bed for the chicken.
  4. Lay the seasoned chicken breasts on top of the potatoes.
  5. Pour the chicken broth over everything to keep it moist during cooking.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and fully cooked.
  7. Before serving, garnish with fresh parsley for a pop of color.

Notes
