Garlic Parmesan Cheeseburger Bombs

These hot little pockets filled with seasoned ground beef and melty cheese, wrapped in biscuit dough and brushed with garlic-Parmesan butter, are quick to make and irresistibly delicious.

Ingredients
  

Filling Ingredients
  • 1 lb ground beef 80/20 gives good flavor and moisture; leaner beef works if you drain excess fat
  • 1 cup shredded cheese cheddar or mozzarella — cheddar gives more bite, mozzarella gives stretch
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper
Dough and Topping
  • 1 can (12 oz) refrigerated biscuit dough feel free to use large or small biscuits
  • 4 tbsp butter, melted
  • 2 tbsp grated Parmesan cheese

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Heat a skillet over medium heat. Add the ground beef and cook, breaking it into small pieces, until browned and no pink remains.
  3. Sprinkle garlic powder, onion powder, and a pinch of salt and pepper over the cooked beef. Stir to combine and remove the skillet from the heat.
  4. Open the biscuit can and gently flatten each biscuit with your hands or a rolling pin. For smaller bites, cut each flattened biscuit in half; leave whole for larger bombs.
  5. Place a spoonful of the seasoned beef into the center of each biscuit piece. Add a small sprinkle of shredded cheese on top of the beef.
  6. Fold the dough up and around the filling. Pinch the seams tightly so the cheese won’t escape while baking. Place each sealed ball seam-side down on the prepared baking sheet.
Baking
  1. Brush the tops of the balls with melted butter. Sprinkle the grated Parmesan evenly over the buttered tops.
  2. Bake for 15 to 20 minutes, or until the biscuits are puffed and golden brown.
  3. Let the bombs rest for a couple of minutes before serving so the filling cools slightly. Serve warm and enjoy.
