Preparation
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, garlic powder, and smoked paprika. Whisk or stir until the spices are evenly suspended in the oil.
- Add the chicken breasts to the bowl and toss them until each piece is fully coated in the spiced oil.
- Arrange the seasoned chicken in a single layer on a rimmed baking sheet. Leave a little space between pieces so hot air can circulate.
- Bake for 25 to 30 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (75°C). Start checking at 22 minutes if breasts are thin.
- Remove from the oven and let rest for 3 to 5 minutes before slicing to allow juices to redistribute.

To freeze, slice or leave whole, wrap tightly and place in a freezer-safe container for up to 3 months. Thaw in the refrigerator overnight before reheating.
