  • 1 package refrigerated sugar cookie dough
Cream Cheese Spread
  • 1 cup cream cheese, softened Full-fat for best texture
  • 1 cup powdered sugar, sifted if lumpy
  • 1 teaspoon vanilla extract
Fruit Toppings
  • assorted fresh fruit: strawberries, kiwi, blueberries, bananas (or other berries, peaches, grapes) Choose a variety of colorful fruits.

Method
 

Preparation
  1. Preheat your oven to the temperature listed on the sugar cookie dough package.
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Press or roll the cookie dough into an even round or rectangle, about 1/4 to 1/2 inch thick.
  4. Bake according to package directions until the edges are light golden. Remove from the oven.
  5. Transfer the baked crust to a wire rack and let it cool completely before adding the filling.
Make the Cream Cheese Spread
  1. In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla until silky and lump-free.
Assemble the Fruit Pizza
  1. Spread the cream cheese mixture evenly over the cooled crust, leaving about 1/4 inch of exposed edge.
  2. Slice and arrange the fresh fruit on top of the cream cheese spread artistically.
  3. If desired, warm a tablespoon or two of fruit preserves until runny and brush lightly over the fruit.
  4. Refrigerate the assembled pizza for at least 30 minutes to set the filling.
  5. Slice into pieces and serve cold.

Notes
