Cream Cheese Mixture

  • 1/4 cup powdered sugar Sift if lumpy.
  • 1 teaspoon vanilla extract
Fresh Fruit Toppings
  • Assorted fresh fruit: strawberries, blueberries, kiwi, mandarin orange segments, or other seasonal favorites Feel free to swap out the fruits based on preference or availability.

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a pizza stone or baking sheet.
  2. On a lightly floured surface, roll the sugar cookie dough into a roughly 12-inch circle and transfer to the prepared baking sheet.
  3. Mold the edges to form a shallow crust.
Baking the Crust
  1. Bake according to package instructions, or until the crust is light golden brown and edges feel set (approximately 12 to 18 minutes).
  2. Allow it to cool completely on a wire rack.
Cream Cheese Filling
  1. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  2. Taste and adjust sweetness if needed.
Assembly
  1. Spread the cream cheese mixture evenly over the cooled cookie crust using an offset spatula.
  2. Decorate the top with sliced and whole fruits in your desired pattern. Add mint leaves if desired.
Chilling and Serving
  1. Chill the assembled pizza in the refrigerator for at least 30 minutes to let the cream cheese set.
  2. Slice and serve cold.
