Ingredients
  

For the crust
  • 1 cup brown sugar
  • 1 cup all-purpose flour (or 1-to-1 gluten-free flour for gluten-free options) Use gluten-free flour if needed.
  • 1/2 cup butter, softened Dairy-free margarine can be used for a dairy-free version.
  • 1 medium egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
For the topping
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the fruit topping
  • assorted fresh fruits: strawberries, blueberries, kiwis, mango, grapes Feel free to substitute fruits according to season or preference.

Method
 

Preparation of the crust
  1. Preheat your oven to 350°F (175°C). Grease a pizza pan or line it with parchment paper for easy removal.
  2. In a mixing bowl, beat the softened butter and brown sugar until creamy and smooth. Add the egg and mix until combined.
  3. Gradually stir in the flour, baking soda, and salt until a soft dough forms.
  4. Transfer the dough to the greased pizza pan, pressing it evenly across the base.
  5. Bake for 15 to 20 minutes, closely monitoring for a golden-brown color around the edges. Once done, let it cool completely on a wire rack.
Preparation of the topping
  1. While the crust cools, beat together the cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and fluffy.
Assembly and chilling
  1. Once the crust is completely cooled, spread the cream cheese mixture evenly over it.
  2. Arrange your sliced fruits attractively on top of the cream cheese layer.
  3. Chill in the refrigerator for 15 to 30 minutes to set.
  4. Slice into wedges and serve chilled. Enjoy!
