Bread and Base Ingredients
  • 6 slices slices bread, preferably brioche or challah Day-old or slightly stale works best.
  • 4 large eggs
  • 2 cups milk Whole milk gives richest results.
  • 1/4 cup granulated sugar Can reduce to 2 tablespoons and add honey or maple to taste.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon May substitute with pumpkin pie spice or cardamom.
  • 1/2 teaspoon salt
Toppings and Serving
  • Fresh berries (strawberries, blueberries, raspberries) For topping.
  • Powdered sugar For serving.
  • Maple syrup For serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish with butter or nonstick spray.
  3. Cut the bread into roughly 1-inch cubes and spread the cubes evenly in the prepared dish.
  4. In a medium bowl, whisk the eggs until blended and frothy.
  5. Add the milk, sugar, vanilla, cinnamon, and salt to the eggs, whisking until smooth.
  6. Pour the custard evenly over the bread cubes and press down lightly so the bread soaks up the liquid.
  7. Cover the dish with plastic wrap and refrigerate for at least 1 hour, or overnight for best texture.
Baking
  1. Remove the casserole from the fridge and let it rest at room temperature for 10 minutes before baking.
  2. Bake for 40 to 45 minutes, until the top is golden and a knife inserted near the center comes out mostly clean.
  3. Let the casserole rest for 5 minutes, then cut into squares and serve warm with fresh berries, a sprinkle of powdered sugar, and a drizzle of maple syrup.

Notes
