French Dip Sliders

These French Dip Sliders are a bite-sized version of the classic sandwich, featuring soft buns filled with roast beef, caramelized onions, Swiss cheese, and served with a warm au jus for dipping.

Ingredients
  

For the Sliders
  • 12 pieces slider buns or small dinner rolls
  • 1 lb thinly sliced roast beef deli-style or leftover roast
  • 2 large onions thinly sliced
  • 8 oz Swiss cheese slices, torn or cut to fit sliders
  • 1 cup au jus for dipping, store-bought or homemade
  • to taste salt for seasoning
  • to taste freshly ground black pepper
  • 4 tbsp unsalted butter melted, for brushing tops

Method
 

Caramelize Onions
  1. Preheat the oven to 350°F (175°C).
  2. Heat a skillet over medium. Add a splash of oil or a little butter and the sliced onions. Cook, stirring now and then, until the onions are deeply golden and sweet, about 20 to 25 minutes. Season lightly with salt toward the end.
Assemble Sliders
  1. Slice the slider buns horizontally and place the bottom halves in a baking dish, close together.
  2. Layer the roast beef across the bottom halves in an even layer. Pile the caramelized onions on top of the beef.
  3. Lay torn or trimmed Swiss cheese over the onions and meat, covering the sliders. Place the top halves of the buns back on.
  4. Brush the tops with melted butter and sprinkle with a little salt and freshly ground pepper.
Bake
  1. Bake for 12 to 15 minutes, until the cheese has melted and the buns are golden. For crisper tops, broil for a few seconds while watching closely.
Serve
  1. Warm the au jus on the stove or microwave. Serve the sliders hot with small bowls of au jus for dipping.

Notes

Swap rolls for king's Hawaiian if you like a sweeter top. If you're short on time, pre-sliced caramelized onions from the store work in a pinch. Refrigerate leftovers in an airtight container and can be reheated easily.
