  • 1 large egg Can substitute with unsweetened applesauce (1/4 cup) or a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl until well blended.
  2. In a separate bowl, combine the milk, egg, melted butter, and vanilla extract, whisking until smooth.
  3. Gently pour the wet ingredients into the dry mix and stir slowly until just combined; a few lumps are okay.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly coat with cooking spray.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake.
  3. Watch for bubbles to form on the surface, then flip the pancakes and cook until golden brown on both sides.
