  • 1 cup buttermilk Room temperature preferred
  • 1 large egg
  • 2 tablespoons melted butter
Fillings and Toppings

Method
 

Preparation
  1. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
Cooking
  1. Heat a non-stick skillet over medium heat.
  2. Drop small amounts of batter onto the skillet to make mini pancakes.
  3. Cook for about 1-2 minutes or until bubbles form on top.
  4. Spoon a small amount of Nutella onto the pancake and cover it with another pancake.
  5. Flip carefully and cook for another 1-2 minutes until golden brown.
  6. Repeat until all batter is used. Serve warm with extra Nutella or maple syrup and fresh fruit.

Notes
