- In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
Cooking
- Heat a non-stick skillet over medium heat.
- Drop small amounts of batter onto the skillet to make mini pancakes.
- Cook for about 1-2 minutes or until bubbles form on top.
- Spoon a small amount of Nutella onto the pancake and cover it with another pancake.
- Flip carefully and cook for another 1-2 minutes until golden brown.
- Repeat until all batter is used. Serve warm with extra Nutella or maple syrup and fresh fruit.
