  • 3 pieces ripe bananas, mashed (about 1 to 1 1/2 cups)
  • 1/3 cup melted butter (unsalted preferred)
  • 3/4 cup sugar (use granulated; reduce by 2–3 tablespoons for less sweetness)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Pour in the melted butter and stir until combined.
  4. Add the sugar, beaten egg, and vanilla. Stir until evenly mixed.
  5. Sprinkle the baking soda and salt over the mixture and stir gently.
  6. Add the flour and fold just until no flour streaks remain. Stop as soon as the batter is uniform—overmixing makes the loaf tough.
  7. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 50 to 60 minutes. Check at 50 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  2. Let the bread cool in the pan for 10 minutes.
  3. Transfer the loaf to a wire rack to cool completely before slicing to avoid a gummy center.

Notes

For dairy-free: swap melted butter for an equal amount of neutral oil. For a slightly healthier loaf: replace up to 1/2 cup of flour with rolled oats or use whole-wheat pastry flour. Bananas should be very ripe for maximum sweetness and moisture.
