  • 1 large egg, beaten For vegan option, use 1 tbsp ground flaxseed + 3 tbsp water.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour For gluten-free, try a 1-to-1 GF flour blend and add 1/4 tsp xanthan gum if the blend lacks it.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas with a fork until mostly smooth.
  3. Stir the melted butter into the mashed bananas until combined.
  4. Add the sugar, beaten egg, and vanilla. Mix until evenly blended.
  5. Sprinkle the baking soda and salt over the wet mixture and stir gently.
  6. Add the flour and fold in with a spatula. Stir just until the flour disappears; do not overmix.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50 to 60 minutes. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  3. Let the loaf cool in the pan for 10 minutes.
  4. Transfer to a wire rack to cool completely before slicing.

Notes
