- Preheat the oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan.
- In a large bowl, mash the bananas with a fork until mostly smooth. Stir in the melted butter until blended.
- Add the sugar, beaten egg, and vanilla. Mix until everything is combined.
- Sprinkle the baking soda and salt over the bowl. Fold in the flour gently until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 55 to 65 minutes. Insert a toothpick into the center; it should come out clean or with a few moist crumbs.
- If the top browns too fast, tent loosely with foil for the last 10 to 15 minutes.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
