- Begin by placing the boneless, skinless chicken breasts at the bottom of your crockpot.
- Next, add the white beans, diced tomatoes, chicken broth, diced onion, minced garlic, chili powder, cumin, and season generously with salt and pepper.

Cooking
- Cover the crockpot and set it to cook on low for 6-8 hours or on high for about 4 hours.
- Approximately 30 minutes before you are ready to serve, shred the chicken in the pot using two forks.
- Stir in the corn and add the sour cream (or Greek yogurt) for a creamy consistency. Let it heat through for about 15 minutes.
