  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn (frozen or canned)
  • 1 cup sour cream or Greek yogurt Greek yogurt for lighter option

Preparation
  1. Begin by placing the boneless, skinless chicken breasts at the bottom of your crockpot.
  2. Next, add the white beans, diced tomatoes, chicken broth, diced onion, minced garlic, chili powder, cumin, and season generously with salt and pepper.
  3. Stir the ingredients together until well combined.
Cooking
  1. Cover the crockpot and set it to cook on low for 6-8 hours or on high for about 4 hours.
  2. Approximately 30 minutes before you are ready to serve, shred the chicken in the pot using two forks.
  3. Stir in the corn and add the sour cream (or Greek yogurt) for a creamy consistency. Let it heat through for about 15 minutes.
Serving
  1. Serve hot, topped with shredded cheese if desired.
