Ingredients
  

For the soup base
  • 1 pound ground beef or turkey Substitute ground turkey for a leaner option
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons dried Italian herbs
  • 8 ounces lasagna noodles, broken into pieces Can use gluten-free pasta if needed
  • 2 cups fresh spinach
For the toppings
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Plus more for serving if desired
  • to taste Salt and pepper

Method
 

Preparation
  1. In a skillet, brown the ground meat over medium heat with the chopped onion and minced garlic until the meat is no longer pink. Drain any excess fat.
  2. Transfer the meat mixture to your Crockpot.
  3. Add the crushed tomatoes, broth, dried Italian herbs, salt, and pepper. Stir well to combine.
  4. Cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles and fresh spinach.
  6. Just before serving, swirl in the ricotta cheese and sprinkle the mozzarella cheese on top.
  7. Serve hot, optionally with more cheese, crusty bread, or a side salad.
