- In a skillet, brown the ground meat over medium heat with the chopped onion and minced garlic until the meat is no longer pink. Drain any excess fat.
- Transfer the meat mixture to your Crockpot.
- Add the crushed tomatoes, broth, dried Italian herbs, salt, and pepper. Stir well to combine.
- Cook on low for 6 hours or high for 3 hours.
- About 30 minutes before serving, stir in the broken lasagna noodles and fresh spinach.
- Just before serving, swirl in the ricotta cheese and sprinkle the mozzarella cheese on top.
- Serve hot, optionally with more cheese, crusty bread, or a side salad.
