Ingredients
  

Meatballs
  • 1 pound ground beef Use ground turkey or chicken for a lighter option.
  • 1/2 cup breadcrumbs (panko or regular) Substitute with gluten-free breadcrumbs if needed.
  • 1/4 cup grated Parmesan cheese Optional for added umami.
  • 1 large egg Bind the ingredients together.
  • Salt and pepper to taste Salt and pepper Adjust seasoning to preference.
Sauce and Vegetables
  • 1 medium onion, thinly sliced Provides a flavorful base.
  • 2 cups beef broth Use low sodium if preferred.
  • 1 packet French onion soup mix Can adjust for lower sodium.
  • Fresh parsley for garnish Fresh parsley for garnish Optional for added color.

Method
 

Preparation
  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, and a pinch of salt and pepper. Mix gently until just combined.
  2. Form into even meatballs (about 12–16, depending on size).
  3. Spread the thinly sliced onion in an even layer on the bottom of the crockpot.
Cooking
  1. Arrange the formed meatballs over the onions in a single layer.
  2. Whisk together the beef broth and the French onion soup mix until dissolved. Pour the mixture evenly over the meatballs.
  3. Cover and cook on low for 6–8 hours or on high for 3–4 hours until the meatballs reach an internal temperature of 160°F (71°C).
Serving
  1. Serve hot, garnish with chopped fresh parsley if desired.

Notes

For a thicker sauce, mix 1–2 teaspoons of cornstarch with cold water and stir into the crockpot 20–30 minutes before serving. Optional to brown meatballs in a skillet for better texture.
