  • 2 lbs beef chuck roast (trimmed of excess fat if preferred) Choose a chuck roast for its marbling and connective tissue.
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 1 cup beef broth (low-sodium recommended) Use low-sodium for better control over saltiness.
  • 1 cup water
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • to taste Salt and pepper Season lightly, considering the salt content from the broth and soy sauce.
  • 4 pieces hoagie rolls
  • to taste Sliced provolone or mozzarella cheese (optional)

Method
 

Preparation
  1. Pat the chuck roast dry with paper towels.
  2. Place the roast in the slow cooker.
  3. Scatter the sliced onion and minced garlic over the top of the beef.
  4. Pour in the beef broth and water. Add the Worcestershire and soy sauces.
  5. Season lightly with salt and several grinds of black pepper.
Cooking
  1. Cover and cook on low for about 8 hours, until the beef pulls apart easily.
  2. Remove the meat to a cutting board or shred it in the slow cooker using two forks.
  3. Strain the cooking liquid through a fine mesh sieve and reserve as au jus for dipping.
  4. Serve the shredded beef piled on hoagie rolls, topping with provolone or mozzarella if desired.

Notes
