  • 4 cups diced potatoes
  • 1 pound ground beef Can substitute with ground turkey or chicken for a lighter version.
  • 1 medium onion, diced
  • 2 cups beef broth Chicken broth can also be used.
  • 1 cup cream or milk
  • 1 can condensed cream of mushroom soup Can substitute with cream of potato soup if preferred.
  • to taste Salt and pepper
Optional Garnishes
  • to taste shredded cheese For topping.
  • to taste green onions For garnish.

Method
 

Preparation
  1. Start by browning the ground beef and diced onion in a skillet over medium heat. Once cooked, drain any excess fat.
  2. Transfer the beef and onion mixture into your crockpot.
  3. Add the diced potatoes, beef broth, cream of mushroom soup, and season with salt and pepper.
  4. Stir everything together to ensure it’s well mixed, then cover the crockpot.
Cooking
  1. Cook the mixture on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  2. Just before serving, stir in the cream or milk to make it delightfully creamy.
  3. Garnish with shredded cheese and green onions if desired.

Notes
