  • 1/2 cup gluten-free Panko breadcrumbs Adds extra crunch.
  • 2 teaspoons Italian seasoning You can substitute with different herbs.
  • 2 teaspoons garlic powder
  • 2 pieces eggs for egg wash Beaten.
  • as needed for frying Avocado oil Heat to about 350°F for optimal crispiness.
  • Salt and pepper to taste Salt and pepper For seasoning the chicken.

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. Create a breading station: one plate for gluten-free flour, a bowl for beaten eggs, and another plate for a mixture of gluten-free breadcrumbs, Italian seasoning, and garlic powder.
  3. Dredge each piece of chicken in the flour, then dip it into the egg wash, and finally coat it with the breadcrumb mixture.
Cooking
  1. Heat avocado oil in a skillet over medium heat until hot but not smoking.
  2. Carefully add the chicken tenders to the skillet and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
  3. Once done, remove from the skillet and serve warm alongside your favorite dipping sauce.
