Preparation
- Combine the water, butter, 2 tablespoons sugar, and salt in a medium saucepan. Bring to a boil over medium heat.
- Remove the pan from the heat and immediately stir in the flour with a wooden spoon until a smooth dough forms.
- Let the dough cool for 5 minutes.
- Beat in the eggs one at a time until the dough is smooth and glossy.
- Stir in the vanilla extract until evenly mixed.
Cooking
- Preheat the air fryer to 375°F (190°C).
- Pipe small 1-inch rounds onto a sheet of parchment paper.
- Transfer the parchment with the piped bites into the air fryer basket and lightly spray the tops with cooking spray.
- Air fry for 8 to 10 minutes, checking at 8 minutes to avoid over-browning.
- Remove churro bites from the air fryer and toss them in the cinnamon-sugar mixture while hot.
