  • 2 pounds boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 1 cup heavy cream or sour cream
  • to taste Fresh cilantro for garnish

Cooking
  1. In your crockpot, add the chicken breasts, diced onion, minced garlic, drained white beans, drained corn, chicken broth, cumin, chili powder, salt, and pepper.
  2. Cook on low for 6-8 hours or high for about 4 hours, until the chicken is cooked through and tender.
  3. Once cooked, carefully remove the chicken and shred it using two forks.
  4. Return the shredded chicken to the crockpot and stir in the heavy cream or sour cream until combined and creamy.
  5. Serve hot, garnished with fresh cilantro for a pop of color and flavor.
