  • 4 pieces boneless, skinless chicken breasts Pound to even thickness for uniform cooking.
  • 1/2 cup mayonnaise or plain Greek yogurt Greek yogurt for tang and fewer calories.
  • 1/2 cup grated Parmesan cheese Use freshly grated for best melt and flavor.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Optional garnish: chopped parsley or chives

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a 9-by-13-inch baking dish.
  2. In a small bowl, whisk together the mayonnaise or Greek yogurt, grated Parmesan, garlic powder, onion powder, paprika, and a pinch of salt and pepper until smooth. Taste and adjust seasoning.
  3. Pat the chicken breasts dry with paper towels and arrange them in a single layer in the prepared baking dish.
  4. Spread the creamy Parmesan mixture evenly over the top of each breast.
Cooking
  1. Bake uncovered for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the topping is golden and bubbling.
  2. Remove from the oven and let the chicken rest for 5 minutes before serving. Sprinkle with chopped parsley or chives if desired.
