Method
Cooking Pasta
- Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente.
- Before draining, reserve 1 cup of the starchy pasta water.
- Drain the pasta.
Making the Sauce
- Heat 2 teaspoons of olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is soft and the garlic is fragrant, about 4-5 minutes.
- Add the ground beef to the skillet. Break it into pieces with a spatula and cook until browned, about 6-8 minutes.
- Season with salt, pepper, and 2 teaspoons of Italian seasoning. Taste and adjust seasoning.
- Reduce the heat to low. Pour in the heavy cream and stir to combine.
- Add reserved pasta water a little at a time until you reach the desired sauce consistency, starting with 1/4 cup.
- Turn off heat and stir in the grated Parmesan until melted into a smooth sauce.
Combining Pasta and Sauce
- Add cooked penne to the skillet and toss gently until every piece is coated in the creamy beef sauce.
- Serve immediately, garnished with extra Parmesan or chopped parsley if desired.
