Ingredients
  

For the Soup
  • 2 tablespoons olive oil For sautéing
  • 1 medium onion, chopped Adds flavor base
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups mixed vegetables (zucchini, green beans, spinach) Use any seasonal vegetables
  • 1 cup heavy cream or coconut milk For creaminess
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or dill)
  • Bread for serving

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute.
Cooking
  1. Pour in the vegetable broth and add the mixed vegetables, thyme, basil, salt, and pepper.
  2. Bring to a simmer and cook until the vegetables are tender, about 10-15 minutes.
  3. Stir in the heavy cream or coconut milk and heat through.
  4. Adjust seasoning as needed.
  5. Serve hot, garnished with fresh herbs, and enjoy with bread.
