  • 3 pieces overripe bananas, mashed The riper, the better!

  • 0.5 cups granulated sugar
  • 0.25 cups light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
For the Coffee Cake Crumb Topping
  • 0.5 cups all-purpose flour
  • 0.25 cups granulated sugar
  • 0.25 cups light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cups unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners or spraying it with cooking spray.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, mash the bananas, then mix in the melted butter, granulated sugar, brown sugar, egg, vanilla extract, and cinnamon until incorporated and smooth.
  4. Gently combine the wet mixture with the dry ingredients, stirring until just combined—don’t overmix!
Making the Crumb Topping
  1. For the crumb topping, mix together the flour, sugars, cinnamon, and salt in a small bowl.
  2. Pour in the melted butter and stir until the mixture is crumbly.
Baking
  1. Fill each muffin cup about 2/3 full with the batter, then generously sprinkle the crumb topping over each.
  2. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  3. Let the muffins cool for about 5 minutes in the pan before transferring them to a wire rack. Enjoy them warm!
