Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter, sugar, egg, baking soda, vanilla extract, and a pinch of salt. Mix until everything is well integrated.
  3. Using tablespoons, scoop out the dough and roll it into balls.
  4. Arrange the balls on a baking sheet, then flatten each with a fork to create a criss-cross pattern.
  5. Bake for 8-10 minutes, until they're lightly golden around the edges.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
