Preparation
- Preheat the oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- Mash the ripe bananas in a bowl until mostly smooth with a few small lumps.
- Stir the melted butter into the mashed bananas.
- Add the baking soda and a pinch of salt, and stir to combine.
- Mix in the sugar, beaten egg, and vanilla extract until smooth.
- Fold the flour in gently with a spatula until just combined — do not overmix.
Assembling
- Pour half of the batter into the prepared loaf pan and spread it level.
- Sprinkle the cinnamon sugar evenly over that layer.
- Spoon the remaining batter on top of the cinnamon sugar and smooth the surface.
- Drag a knife through the batter a few times to create a swirl, lifting slightly to blend the cinnamon ribbon.
Baking
- Bake for 50 minutes to 1 hour. Insert a toothpick in the center; it should come out clean or with a few moist crumbs. If the top browns too fast, tent with foil after 35–40 minutes.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Serve slices slightly warm with a pat of butter or cream cheese. It's lovely with coffee or tea, or toasted with almond butter for a quick snack.
