Preparation
- Preheat the oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Mix in the flour until just incorporated.
- In a small bowl, combine brown sugar and cinnamon.
- Pour half of the banana batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mix on top. Pour in the remaining batter and top with the rest of the cinnamon sugar.
- Use a knife to swirl the batter gently.
Baking
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before slicing.
