Ingredients

Main Ingredients
  • 1 large large egg
  • 1/2 cup unsalted butter, melted Can brown slightly for extra flavor.
  • 1/4 cup honey Substitute with 1/4 cup maple syrup for a different note.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Use a 1:1 gluten-free flour blend if needed.
  • 1 cup light brown sugar, packed Dark brown works for a deeper molasses flavor.
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 3 tablespoons granulated sugar for the topping

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare an 8x8-inch baking pan by greasing it or lining it with parchment paper with an overhang for easy removal.
  2. In a medium bowl, whisk the melted butter and packed brown sugar until smooth and glossy.
  3. Whisk in the egg, then stir in the honey and vanilla until the mixture is uniform.
  4. Add the flour, salt, and 1/2 teaspoon cinnamon. Gently fold with a spatula until just combined.
  5. Pour the batter into the prepared pan and spread it into an even layer with the spatula.
  6. In a small bowl, combine the granulated sugar with the remaining 1/2 teaspoon cinnamon. Sprinkle this evenly over the batter.
Baking
  1. Bake for 22 to 25 minutes. The edges should be set and the center should spring back slightly. A toothpick inserted into the center should come out with a few moist crumbs.
  2. Remove from the oven and let the blondies cool completely in the pan.
  3. Use the parchment overhang to lift them out, then slice into squares.
