  • 1 cup unsalted butter, melted You can use salted butter; reduce added salt to 1/2 tsp.
  • 2 cups brown sugar Light or dark brown sugar both work; dark gives deeper molasses notes.
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour For gluten-free, substitute a 1:1 GF baking blend.
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar for topping Mix with a pinch of cinnamon for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment.
  2. In a large bowl, stir the melted butter and brown sugar together until smooth and glossy.
  3. Add the eggs one at a time, beating briefly after each addition. Stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
  5. Fold the dry mixture into the wet ingredients until just combined. The batter should be thick and slightly glossy.
  6. Spread the batter evenly in the prepared pan and tap the pan on the counter to level it.
Baking
  1. Sprinkle the granulated sugar mixed with a pinch of cinnamon over the top.
  2. Bake for 25–30 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
Cooling
  1. Cool completely in the pan on a wire rack before slicing into squares.
  2. For cleaner cuts, chill for 30 minutes before slicing.

Notes
