Preparation
- Combine water, 2 tablespoons sugar, unsalted butter, and salt in a medium saucepan. Heat over medium until it comes to a boil.
- Remove the pan from heat immediately. Add the flour all at once and stir vigorously until the mixture forms a smooth dough and pulls away from the sides.
- Let the dough rest for 3 to 5 minutes so it cools slightly. Stir in the vanilla extract.
- Preheat your air fryer to 375°F (190°C).
- Transfer the dough to a piping bag fitted with a round tip, or use a spoon. Pipe small rounds about 1 inch in diameter onto a parchment-lined tray for easy handling.
- Lightly spray each churro bite with cooking spray to promote even crisping.
Cooking
- Air fry in a single layer for 10 to 12 minutes, rotating the basket once if your model needs it, until they’re golden brown and puffed.
- Mix 1/4 cup sugar with 1 teaspoon cinnamon in a shallow bowl. While bites are warm, toss them gently in the cinnamon-sugar to coat. Serve right away for best texture.

For a richer bite, you can add one egg to the dough for extra lift. For a lower-sugar coating, reduce the 1/4 cup sugar to 2 tablespoons and increase cinnamon. Store leftover churro bites in an airtight container at room temperature for up to 24 hours. For longer storage, freeze uncoated, cooled bites on a tray for up to 1 month.
