Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a saucepan over low heat, melt the butter. Stir in sugar, eggs, and vanilla until fully combined.
- In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture just until combined.
- Pour the brownie batter into the prepared pan and bake for 25 to 30 minutes. Let them cool completely afterward.
Mousse Preparation
- For the mousse layer, whip the heavy cream with powdered sugar until soft peaks form.
- Melt the chocolate chips and allow them to cool slightly. Gently fold the melted chocolate into the whipped cream.
- Spread the mousse over the cooled brownies to create an even layer.
- Refrigerate the brownies for at least 2 hours to set the mousse.
Ganache Preparation
- To prepare the ganache, melt chocolate with a splash of cream.
- Pour this over the mousse layer and allow it to set completely before serving.

To keep brownies fresh, store in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months. Let them thaw overnight in the fridge before serving.
