Method
 

Preparation
  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a stand mixer or large bowl, cream the butter on medium speed until light and fluffy, about 5 to 7 minutes.
  3. Gradually add the granulated sugar and light brown sugar, mixing until smooth and pale.
  4. Blend in the eggs and vanilla extract until creamy.
  5. Gradually add the flour mixture, stirring gently until well combined.
  6. Fold in the semi-sweet and milk chocolate chips.
Chill Dough
  1. Refrigerate the dough for 24 to 36 hours for best flavor and texture.
Baking
  1. Preheat the oven to 350°F and line cookie sheets with parchment paper.
  2. Scoop heaping tablespoons of dough and roll them into balls; place 8 per cookie sheet.
  3. Bake the cookies for 9 to 11 minutes, or until lightly golden.
