Ingredients
  

For the cookie base
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the cheesecake filling
  • 8 oz cream cheese, softened Ensure at room temperature for easy mixing.
  • 1/4 cup powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a mini muffin pan.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the butter and granulated sugar until creamy. Add the egg and vanilla, mixing well.
  4. Gradually add the dry ingredients to the wet ingredients and mix until combined.
Assembling
  1. Press a spoonful of the chocolate cookie dough into each muffin cup.
  2. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  3. Spoon the cheesecake mixture into the center of each cookie crust.
Baking
  1. Bake for 12-15 minutes or until the edges are firm.
  2. Let cool before serving.
