Preparation
- Place the shredded chicken in a large mixing bowl.
- Add the chopped romaine lettuce on top of the chicken.
- Spoon the Caesar dressing over the chicken and lettuce.
- Sprinkle the grated Parmesan into the bowl.
- Toss gently until everything is coated, being careful not to over-toss to keep the lettuce crisp.
- Lay out a tortilla and divide the chicken mixture into four equal portions, placing each portion in the center of a tortilla.
- If using croutons, sprinkle a few onto each portion now for crunch.
- Fold the sides of the tortilla inward, then roll tightly from the bottom to secure the filling.
- Slice each wrap in half on the diagonal and serve right away, or wrap individually and chill for later.
