  • 2 cups cooked chicken, shredded Rotisserie or poached chicken works well
  • 2 cups romaine lettuce, chopped and well-drained Use cold, fully drained lettuce to prevent a watery wrap
  • 1/2 cup Caesar dressing Use your favorite bottled dressing or homemade
  • 1/4 cup grated Parmesan cheese For a dairy-free option, use dairy-free Parmesan alternative
  • 4 large tortillas or wraps To make gluten-free, use gluten-free tortillas
  • to taste croutons Optional, for added crunch

Method
 

Preparation
  1. Place the shredded chicken in a large mixing bowl.
  2. Add the chopped romaine lettuce on top of the chicken.
  3. Spoon the Caesar dressing over the chicken and lettuce.
  4. Sprinkle the grated Parmesan into the bowl.
  5. Toss gently until everything is coated, being careful not to over-toss to keep the lettuce crisp.
  6. Lay out a tortilla and divide the chicken mixture into four equal portions, placing each portion in the center of a tortilla.
  7. If using croutons, sprinkle a few onto each portion now for crunch.
  8. Fold the sides of the tortilla inward, then roll tightly from the bottom to secure the filling.
  9. Slice each wrap in half on the diagonal and serve right away, or wrap individually and chill for later.
