  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is softened but not melted.
  • 1 cup packed brown sugar
  • 1/2 cup molasses Honey or maple syrup can be used as substitutes.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar for rolling

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the butter and brown sugar until smooth. Stir in the molasses, egg, and vanilla until well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
  5. Roll the dough into small balls and roll each ball in sugar. Place them on the prepared baking sheets.
  6. Bake for 8-10 minutes, or until the edges are firm. Let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
