  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 3/4 cup unsalted butter, softened Use room temperature for easier mixing.
  • 1 cup brown sugar
  • 1/2 cup molasses Can be substituted with honey or maple syrup.
  • 1 large egg
  • 1 teaspoon vanilla extract
For Rolling
  • 1/2 cup granulated sugar For rolling the cookie dough balls.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, beat the softened butter and brown sugar until smooth.
  4. Add molasses, egg, and vanilla; mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
Baking
  1. Roll the dough into small balls, then roll in granulated sugar.
  2. Place on a baking sheet lined with parchment paper.
  3. Bake for 8-10 minutes until edges are firm.
  4. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
