Ingredients

Main ingredients
  • 1 lb ground beef (80/20) Works well for flavor
  • 1 small onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese Use medium-sharp for flavor
Batter ingredients
  • 1/2 cup Bisquick or all-purpose baking mix For a substitute, use 1/2 cup all-purpose flour plus 3/4 teaspoon baking powder and a pinch of salt.
  • 1 cup milk
  • 2 large eggs
Optional for serving
  • ketchup
  • mustard
  • pickles

Method

Preparation
  1. Preheat the oven to 400°F (200°C). Grease a 9-inch pie dish.
  2. Heat a skillet over medium. Add the ground beef and diced onion. Cook, breaking the meat up, until browned and the onion is tender, about 6–8 minutes. Drain excess fat.
  3. Return the meat to the pan, season with salt and pepper, and stir to combine.
  4. Spread the beef and onion mixture evenly in the prepared pie dish. Sprinkle the shredded cheddar over the meat.
Batter preparation
  1. In a medium bowl, whisk together the Bisquick (or flour mix), milk, and eggs until smooth.
  2. Pour the batter gently over the meat and cheese, tilting the dish as needed to cover evenly.
Baking
  1. Bake for 25 to 30 minutes, until the top is golden and a knife inserted comes out clean.
  2. Remove from the oven and let the pie rest for 5 minutes before slicing.

Notes

For best results, shred your own cheddar cheese from a block for better melt and flavor.
